I was inspired by Bakerella, a blog I read occasionally, to create a Valentine's treat for the family. I modified the inspiration a bit in that I didn't feel up to working with fondant, so instead I made a single layer red velvet cake and used the other layer to make the cake balls.
To cover the cake balls, I used the same chocolate coating as on cappuccino flats, Chris's favorite cookie:
1.5 Cups of semisweet chocolate chips
3 Tablespoons shortening
melted together in the top of a double broiler
We meant to post a photo of the inside of the cake balls, but they went a little too fast for that. Hope everyone had a Happy Valentine's Day.
